The first version of this recipe came from my friend Natalie (aka @guacmylife) a few months ago and we have literally not stopped making them since. My husband, kids, and I all love them (which is very rare!!), they are so simple, and they come together in just minutes. I get asked for the recipe on the reg, so I finally decided I needed to add it to the site! Hope you’ll give my Turkey Meatball Muffins a try and let me know what you think! - 1 lb organic ground turkey or chicken
- 2 tbsp ground flax
- 1 egg
- 1 cup frozen riced cauliflower, defrosted
- 2 tbsp coconut aminos
- salt and pepper to taste
Preheat over to 375°. Combine all ingredients. Spray muffin tin with 100% oil spray. Fill cups about halfway (should make 12 cups) and bake for 20-25 minutes until cooked through
