If you like my classic LivLight Overnight Oats and Chia Pudding recipes, you are going to be blown away by this unbelievable combination of the two, which is amped up by the awesome Fall flavors. As always, this recipe is totally versatile and the fruits and nuts can be substituted or removed based on your taste! Make this tonight for a fast and easy breakfast to have throughout the week!
- 2 cups gluten free oats
- 4 cups unsweetened almond milk
- ½ crisp apple, chopped (I like Honeycrisp)
- ½ lemon
- ¼ cup chia seeds
- 4 dates, chopped in small pieces
- ¼ cup chopped walnuts
- cinnamon, a few shakes
Place oats, milk and apple in a glass-lock container or bowl with lid. Squeeze lemon over apples. Add pumpkin, chia seeds, dates, walnuts and cinnamon and stir well. Place in refrigerator overnight. Scoop into bowl and serve with toppings of your choice (I love ground flax and almond butter).
