You’ve probably noticed on Instagram (@LivLight_) that I am completely obsessed with Overnight Oats! They are super easy to make at night and a huge time saver in the AM. I like to make mine in a large glass-lock container on Sunday night so I can keep them in the fridge for the week. I also love how versatile they are…I recently added pumpkin, chia and flax to give mine a nice Fall twist! The best part about them is my entire family loves them, making them a perfect breakfast for us all to have together!

Ingredients:

  • 2 cups gluten free oats
  • 3 cups unsweetened almond milk
  • ½ crisp apple, chopped (I like pink lady apples)
  • ½ lemon
  • ½ cup blueberries
  • ¼ cup roughly chopped nuts (I like walnuts or almonds)
  • 3 dates, chopped in small pieces

Directions:

Place oats, milk and apple in a glass-lock container or bowl with lid.  Squeeze lemon over apples.  Add blueberries, nuts, dates and cinnamon and stir well.  Place in refrigerator overnight.  Scoop into bowl and serve with toppings of your choice (I love bananas, ground flax and almond butter!).

Notes

If your oats are a little thick in the morning, add some additional almond milk to reach your desired thickness. My 4-year-old daughter loves this, especially when I make it into an “oat sundae bar” by putting topping in little bowls and letting her decorate her sundae.
