I created this green smoothie in honor of St. Patrick’s Day and it quickly became a favorite around here. It’s creamy and delicious with the perfect hint of mint. Ingredients:
- 1 cup unsweetened almond milk (+ more as needed)
- 1 cup frozen riced cauliflower
- 2 big handfuls baby spinach
- 1/4 avocado
- 1 small frozen banana (optional)
- 1/4 tsp @simplyorganicfoods peppermint oil
- vanilla plant-based protein
- 1 scoop Vital Proteins collagen powder (leave out for vegan)
Directions:
Add one cup of nut-milk to your high-speed blender (I use and love this Vitamix) along with all the additional ingredients. Blend on high until smooth, adding additional milk as needed.
