As you can probably guess, I don’t love to give my girls mac ‘n cheese out of a box. My Truly Easy Mac is just that…truly easy. It honestly takes two extra minutes (just to grate the cheese) and allows you to eat or serve a homemade, 5-ingredient version of mac ‘n cheese that you can feel great about! I use 100% brown rice fusilli in mine (I prefer to limit gluten), but you could use any type and shape of dry pasta that you prefer. Ingredients:

  • 1 lb dry pasta (I use 100% rice fusilli, but whole wheat would be good too)
  • ½ tbsp butter
  • ¼ cup whole milk
  • 1 cup organic cheddar, freshly grated
  • ¼ cup Parmesan, freshly grated

Directions:

Cook pasta according to the package, making sure to keep it slightly al dente. Strain (reserving two tablespoons of pasta water) and run under warm water to keep it from sticking together. Add butter, milk, cheddar, and pasta water into the warm pot on low heat and stir to create a cheese sauce. Add pasta back in and stir to combine. Top with Parmesan.
