I’ve said it before and I’ll say it again…french toast is totally underrated!! It is super fast and easy to make, delicious, and can be a wonderfully healthy breakfast. A dear friend recently challenged me to create a vegan and gluten-free version, and I’m sure you can imagine how much I love this type of request. She is allergic to gluten, but you could certainly make this simply a vegan french toast if you are not celiac or sensitive to gluten. I love to top mine with fruits, nuts or nut butter, and cinnamon, but you could also switch these out for any toppings you love!
Ingredients:
- 2 pieces of gluten free* bread (I use Bread SRSLY)
- 2 flax eggs**
- ¼ cup almond milk
- 1/8 tsp cinnamon
- coconut oil
Directions:
Whisk flax eggs, almond milk, and cinnamon until well combined. Place a small amount of coconut oil in a large skillet on med-high. Dip bread into the flax egg mixture on both sides, allowing it to soak in for about a minute (until well-saturated, but not falling apart). Place in pan and cook both sides until they are golden brown. Serve with real maple syrup or cinnamon-sugar (I use coconut sugar and my daughters love it!)
*Feel free to use any vegan bread you like if you are not sensitive to gluten. I love Food for Life Ezekiel.
** To make each flax egg, combine 1 tbsp of ground flax with 3 tbsp water and mix well. Refrigerate for at least 15 minutes. It should have an egg-like sticky consistency.
