This recipe is inspired by one I came across on Gwyneth Paltrow’s website, goop.com. I tweaked a few things and it came out perfectly. It is super easy and has proven to be a crowd pleaser in my house; loved by adults, kids and babies all the same!
Ingredients:

- 2 ripe bananas
- 1 ½ cups unsweetened almond milk
- ½ cup water
- 1 cup gluten free oats
- ¼ tsp cinnamon
- pinch of salt
- ½ tsp vanilla
- walnuts pieces
- pumpkin seeds

Directions:
Smash one banana in a medium saucepan using a rubber spatula or wooden spoon. Add almond milk, water, pinch of salt, and cinnamon and bring to a simmer over medium-high heat. Add oats and cook to desired thickness, stirring often. Add vanilla and pour into serving bowls. Top with additional banana, walnuts, pumpkin seeds or additional toppings of your choice (i.e. other nuts or seeds, nut butter, other fruits, etc.).
